Finding Clos Solene Wines at HdR – YES!!!

So here we are, wine glass in hand, wandering around at the Hospice du Rhone Grand Tasting and we found one of our new favorite Paso Robles winemakers, Guillaume Fabre!  He and his lovely wife, Solene were pouring their wine, Clos Solene (you get where he came up with the name, right??).  This is some incredibly delicious wine, and we freak out about it every time we come across it!  Seeing as how he only makes a few hundred cases a year, it’s not easy to find.

Guillaume is the assistant winemaker to Stephan Asseo at L’Aventure, out of Paso Robles.  They’re known for their high quality and very delicious wines, done with the French influence of their homeland.

So we tasted with Guillaume and Solene and then got a chance to do a quick interview with Guillaume.  The amazing thing about the Clos Solene wines, is how he literally handcrafts them, paying attention to every grape, every barrel, and every step in the process to turn out an awesome product.  The interview says it all; Guillaume is super fun to talk to, as you may remember from some of our past talks with him!
